An Edible Forest Floor Part 3

The colors of the Edible Forest Floor menu is reflective of Autumn – one of four seasons and it gave diners the right ambience as HK was indeed in its Fall or Autumn season.

Course 1  pictured below and called simply ” Autumn” was a dish comprising pumpkin, ham and seeds. The ham was cured over 36 months!

Beef In melon

Course 2 was entitled ” Branches” which were devised out of Pumpernickel, malt, organic butter

Good opening…although I felt it was “dull” looking in terms of colors. But the Chef had an excuse as it was the theme he wanted and that is “Autumn” – I wonder if Chef would consider adding some animal life in this Edible Forest theme. For eg, create an Alice in Wonderland type effect and include squirrels or chipmunks or a rabbit (voila! He would have another theme that could be used for Easter or a magical scene developed out of his Edible Forest Floor) 🙂
